Snake Gourd (Trichlosanthes cucumerina) is a delicious vegetable popular in southeast Asia and India. The young fruit can be consumed in the same way as zucchini or summer squash when harvested young. We love them grilled, sauteed, or simmered in a curry. They prefer a warm subtropical environment. They thrive on windward Hawaii Island and are resistant to the rain and fungal disease pressure that makes growing zucchini challenging here. They also seem to be less attractive to squash vine borer which is a frequent pest of zucchini here.
